Ghoulal - Savoring Moroccan Snails Soup with Tradition

A culinary journey to the heart of Marrakech, seasoned with memory, taste, and vibrant ceramic bowls

The streets of Marrakech come alive at dusk with the savory aroma of Ghoulal. Snails' soup, a popular street food, is a heart-warming delicacy that takes me back to my childhood days by my elementary school where "Hmed" served it with a smile.

Making Ghoulal at home is an experience as rich as its flavors. This recipe is a tribute to the memories, the streets, and the artisans who craft the beautiful bowls that enhance this dining experience.


  • 2 lbs snails
  • 1 gal water
  • 1 teaspoon Pepper corn
  • 1 teaspoon Cumin seeds
  • 1" Whole ginger
  • 1/2 teaspoon whole Anise seeds
  • 2 to 3" liquorice root
  • 3 sprigs each of Mint, Peppermint, Thyme, Tarragon, Oregano
  • Crushed peppers to taste
  • 1/2 teaspoon Fennel seeds


  1. Prepare the Snails: Follow traditional Moroccan cleansing method or simply rinse well.
  2. Prepare the Bouquet Garni: Tie all the herbs and spices in a cheesecloth.
  3. Cook: In a 6 Qt stock pot, bring water to a boil. Add the bouquet garni and snails. Cover and let cook for 1 hour or until snails are done.
  4. Serve: Serve in a bowl with broth. Use a toothpick to extract the meat out of the shell. Enjoy the broth by itself if you wish.
