Cooking tagines
Cooking tagines are made for slow heat. The conical lid sends the steam back down onto the meat and vegetables, so the dish simmers gently in its own juices — on a heat diffuser over gas or electric, or in the oven.
At TUYYA, a Moroccan store in Montréal, we carry tagines from six pottery towns — Rabat, Salé, Marrakech, Safi, Fès and Oued Laou — in natural terracotta and glazed clay, and in several sizes: a 30 cm tagine serves 4 to 6. Order online, or see the pieces at our Montréal warehouse by appointment.
Before its first use, a clay tagine is soaked and seasoned so it can take the heat. Looking for a tagine for the table instead? See our serving tagines.
